Snack Time + OXO Tot

This month we've partnered up with OXO Tot again to a fun snack time food idea for fall mash-able foods!

Today I wanted to share a fall family favorite recipe, Apple Mash!

Ingredients

  • 5 Jonathon Apples
  • 1 1/2 Cups Water
  • 1 Cinnamon Stick
  • 1 Dash of Nutmeg
  • 1 Tsp Lemon Juice

Directions

  1. Cut apples in half and remove any seeds or core. Set aside.
  2. In a pot add water, cinnamon stick, nutmeg and lemon juice. Bring to a boil.
  3. Add apples and stir once. Let sit for 30 minutes on medium heat.
  4. Stir apples again and check every 5 minutes until water has dissipated and apples are soft.
  5. Remove any large chunks of skin and the cinnamon stick.
  6. Place apples in your Food Masher and mash until no large chunks are viable.

The color of the mash turns out beautiful when you use Jonathon Apples (or any other sweet red apple) and the flavors are amazing! Adding lemon juice helps add a little tang and the spices are the perfect combination for fall and not too potent for baby!

For leftovers we us the Glass Baby Blocks that are perfect for storing and re-heating! (we love warmed up apple mash!)

Caramelized Onion + Mushroom + Gruyere Mini Flat Bread

Ingredients

  • 2 tbsp. vegetable oil
  • 1 large onion, thinly sliced
  • 4 oz. baby bell mushrooms, sliced
  • 2 tbsp. unsalted butter
  • 1½ granny smith apples, cubed into ½" cubes
  • 1 tsp. granulated sugar
  • 1½ oz. grated gruyere cheese
  • 2 tbsp. chives, minced
  • ½ tsp. dried thyme
  • 1 package (1 pound) of frozen puff pastry, thawed
  • 1 egg, beaten

Instructions

  1. Preheat oven to 400 degrees. Line baking sheets with silicone baking mats. Set side.
  2. In a large skillet, heat the vegetable oil and cook the onions (with 1 tsp. of salt) until they're golden brown, about 30 minutes. Remove and set aside in a large bowl. In the same skillet, sauté mushrooms until tender, about 5 minutes. Remove and set aside in the bowl with the onions.
  3. In the same skillet, melt the butter and add in the apples with the sugar. Cook until softened, about 10 minutes. Remove from pan and add to the large bowl with onions and mushrooms.
  4. Add the cheese, chives, and thyme to the bowl and stir to combine the mixture well. Season with salt and pepper, to taste.
  5. With a pizza cutter, cut the puff pastry into 2-inch squares and place them on the lined baking sheets. Using a pastry brush, brush beaten egg on the squares.
  6. Using a tablespoon, place filling in the middle of each puff pastry.
  7. Bake for 15 minutes, rotating the pans halfway through and switching the baking sheet on the top rack to the bottom and the bottom to the top, until the pastry is golden brown and crisp.
