Guide to Lake Chelan - Quarantine Style

Hi Friends! I wanted to put out a blog post that highlighted a few things to do in Lake Chelan for this coming Memorial Day Weekend or any Summer weekend this year. Since we are all under a “stay home, stay safe” order our little town looks a little different currently. Restaurants are operating with takeout and wineries are operating with curbside pickup. I’m featuring a few of our favorite family-owned businesses that could use your love and support all summer long!

DRINK

Snickers Cups - Vegan, Gluten & Sugar-Free Dessert

Vegan, Gluten & Sugar-Free

Snickers Cups


This is one of our family’s favorite guilt-free desserts that we make! I can feel 100% fine with giving these to my kids, or sneaking a few after they’ve gone to bed!

Ingredients

First layer:

·       1 cup almond slices or almond meal

·       ¾ cup peanuts

·       ¾ cup peanut butter

·       4-5 tbsp maple syrup or honey

·       Pinch of ground sea salt

Second layer:

·       1 ½ cups dates

·       2 tbsp warm water

·       1 ½ cups peanuts

·       1 tbsp organic peanut butter (none with added sugar)

·       Pinch of ground sea salt (or more and you can use salt flakes when you like salted caramel)

Chocolate topping:

·       4 tbsp unsweetened cocoa powder 

·       ½ cup cocoa butter or coconut butter

·       ½ cup honey (or maple syrup for vegan option)

Optional Decoration:

·       Handful of peanuts

·       Cocoa nibs

·       Salt flakes

Instructions:

1.    Blend peanuts and almond slices in a food processor until it looks like a fine breadcrumb. Add maple syrup, salt, and peanut butter. Keep blending (about 3-4 minutes) until it forms a ball or stays together (like fudge).

2.    Press the mixture at the bottom of the silicone muffin cases.

3.    Make dates caramel. Blend juicy dates until almost smooth Add about 2 tbsp warm water and keep blending until it looks smooth. Add peanuts and stir it with a spoon until combined.

4.    Put the caramel and peanuts layer on top of the fudge.

5.    Put the muffin cases into the freezer while making the chocolate topping.

6.    Melt all the chocolate topping ingredients on a low heat until combined (make sure it´s at really low heat. If you want it raw, then the temperature shouldn´t go over 113° F).

7.    Take the snickers out of the freezer and cover it with chocolate and decorate with peanuts and cocoa nibs.

8.    Freeze it at least 2 hours before you take them out of the cases or before you cut slices. (Keeps in the fridge for up to 2 weeks, I usually freeze them so I don’t eat them all!)
